Fluffy steamed rice cakes — the South Indian morning staple, made from fermented idli ravva and urad dal.

Method

Soak idli ravva and urad gota separately 4-6 hours; grind urad to a fluffy batter and mix in the squeezed ravva.

Add salt and ferment covered in a warm spot 8-12 hours until risen and airy.

Stir gently, ladle into greased idli moulds.

Steam 10-12 minutes until a tester comes out clean; rest 2 minutes, unmould and serve with chutney and sambar.
Pantry staples (salt, onion, spices) aren’t added, so add anything else you need from the shop.
